Alpine beefsteak

Hearty South Tyrolean beefsteak

Beef steak

2 South Tyrolean beef sirloin steaks from Alpine cattle (with bone), about 800 g each
Olive oil
Herb salt
Herb butter

Oven potatoes
800 g potatoes from South Tyrol
Freshly ground salt
1 dsp butter

Tomatoes with herbs
4 tomatoes
2 dsp olive oil
Garlic, finely chopped
Thyme, finely chopped
Rosemary, finely chopped
Salt and pepper

Bouquet garni
Season the steaks on both sides with herb salt. Sear in a hot, greased grill pan. Place the herb butter on the steak and cook in the oven at 200 °C for about 10 minutes. Before serving the steaks, allow them to cool for a few minutes at about 70 °C. For the oven potatoes: cut the potatoes into cubes, blanch in salted water, drain and place on a baking sheet. Sprinkle rosemary and salt on the potatoes drizzle with butter. Bake in the oven. For the tomatoes and herbs: mix the breadcrumbs with the other ingredients and place on the halved tomatoes. Brown in the oven (grill) for about 5 minutes. Arrange steaks and tomatoes on a board, garnish with bouquet garni. Serve with oven potatoes.
