Südtiroler Gasthaus focuses on team spirit

The group’s annual meeting took place - culinary projects and working groups have started

Sterzing - The currently 29 members of the group “Südtiroler Gasthaus” recently came together at the restaurant Schaurhof in Ried/Sterzing for their annual meeting.
First, chairman Florian Patauner thanked the board for the successful collaboration and welcomed family Mocatti from the Restaurant “Zum Hirschen” in Unsere Liebe Frau im Walde, St. Felix, as the newest group member.
After that, Patauner gave an overview of the culinary initiatives planned for later this year. The culinary “summer vacation” starts at the end of June and the focus will be on the hotel owner’s favourite vegetables.
“Thanksgiving at Südtiroler Gasthaus” starts at the end of September and the favourite tuber will be in the spotlight. Also, this year, the home-brewed beer “insriGs”, a Märzen from the brewery “Batzen Bräu” in Bozen, will be poured. In 2023, there will also be a new wine, called “insriGer”. The wines to choose from have already arrived, and at the culinary “summer vacation”, the new “insriGer” will be served in all member restaurants.
For both culinary events, producer evenings in the member restaurants are planned, where the guests can find out more about the used products.
Also, the cooperation with Regiokorn, which was started in 2021 by the group “Südtiroler Gasthaus”, the “Meraner Mühle”, and IDM Südtirol, will be continued.
Also, training courses for restaurant owners and their staff are planned again. “With shared projects, events, educational trips, and working groups, the group’s sense of unity is underlined and the appearance as the label ‘Südtiroler Gasthaus’ is strengthened. We all benefit from that”, Patauner said.
The three working groups of “Südtiroler Gasthaus” gave an activity report on the main topics, which are product's market, employees, and sustainability.
Regarding the employees, the group reported that they are planning on starting to develop an employer brand to improve their position in the labour market. Specific training programs for restaurant owners and employees are on the list, as well as underlining special benefits to strengthen the bond between employees and businesses.
Regarding sustainability, the “Naturhotel Pfösl” in Deutschnofen as a best practice business was visited. The group members got an impression of the broad field of sustainability in this hotel and practical inputs for their own work: from the kitchen to energy and purchasing. The group set the goal to reach one of the sustainability labels for South Tyrol by IDM.
Star chef Herbert Hintner, member of the HGV provincial committee and initiator of the group, urged to continue strengthening the sense of community, to keep the quality criteria high, and to use even more regional products. “Doing so, adds value for the guests, the employees, and the business”, Hintner said.
In his welcoming speech, provincial representative Helmut Tauber called the members of the group “lighthouses of the local gastronomy” and underlined the group’s contribution to the significance of gastronomy in South Tyrol and beyond the provincial borders. “This is a sign of the appreciation of the group member’s work for South Tyrol”, Tauber said.
HGV vice president Judith Rainer thanked the group for their engagement and commitment for the South Tyrolean gastronomy and showed herself very impressed by the working groups’ success.
